I’m all about grocery store shortcuts these days, and salad kits are definitely number ONE on my list. But I usually don’t stop with just the kit; I like to doctor them up. And by doctored up I really mean I jazz up the salad kit with many of the ingredients I typically have on hand thanks to my weekly dose of produce prep.

What I love about salad kits is I don’t have to do what I find the most tedious part about making a salad: washing the greens! First world problem, right? But in all seriousness, I really do NOT like washing the greens, drying the greens, cutting the greens. Anything that has to do with anything but consuming the greens. Count. Me. Out. So yes, I’ll pay a little extra and enjoy someone else doing that part for me! I also feel the same way about vacuuming- just ask Ted or my Mom! Too bad the grocery store can’t do that one for me too…

Not pictured in these doctored up salad kits: some of the other goodies I have on hand that make or take my salads to the next level. I.e. nuts, dried fruit, shredded or crumbled cheese [I add extra beyond what the salad kit provides], and other dressings if I’m in the mood for something else.

No real recipe here. Just another idea where the pictures tell the story! Any of these salads count as a side in my house [3 out of 3 like salad, so I consider that a win], or the main meal if I add protein like grilled chicken, hard-boiled eggs, or some type of beef like Ground Beef or grilled Flank Steak strips. But you can do you and add beans or other legumes too!
