I’ve been writing this post for what seems like weeks because hey, newborn life! So unpredictable. And when I do find the energy to start typing I get wrapped up in one of my shows [anyone else hooked on A Million Little Things?!], I decide to open a book, or heck, I take the world’s longest shower uninterrupted. Blogging can wait for those little life pleasures, am I right?! But let’s talk about this slow cooker herb chicken for a minute here, because guys, it’s inevitable the baby wants to eat as soon as I start making dinner. So, I’ve been finding ways to get dinner prepped, cooking, and ready for someone else [aka Ted] to serve while my troops are ready to sit down and eat.
Not a fan of butter? Eh, I’d probably skip this recipe. OK with putting a little butter on things? Then this recipe is for YOU! You can easily pair this slow cooker herb chicken with almost any veggie and whole grain, and if you cut the chicken before cooking as I did, it gets a little crust on it [thank you butter] when cooked on high heat in your slow cooker. Just be careful, because if you don’t watch the chicken it might dry out if cooked for too long.
It’s seriously as simple as that. And as I’m typing my eyelids are feeling heavy and I’m ready to call it a night.
My hope is to write a little family update in the next week or two as I cannot believe Joey turned FIVE and Michael is one month old. Funny how I often think the time is moving too fast, yet there’s not enough time in the day to do all that we need to do! Like cook dinner- so hopefully I’ve got you covered for one night with this one!
Slow Cooker Herb Chicken

Recipe type: Main Dish
Serves: 4-6 servings
- 3 large skinless, boneless chicken breasts, cubed
- 4 tablespoons butter
- ½ teaspoon dried thyme
- ½ teaspoon dried parsley
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- ½ teaspoon onion powder
- 1 cup shredded Parmesan cheese
- Add chicken to slow cooker. Sprinkle with seasonings and top with butter. Stir to coat evenly. Cover slow cooker and cook on high for 3 hours.
- Once cooked through, stir, and top with shredded Parmesan cheese. Serve with your favorite whole grain and vegetable, and drizzle chicken with extra sauce.
If you decide not to shred chicken, cook on high for 4-5 hours.
