What Jeff Ate Wednesday

Hey everybody! I hope you’re all well. It’s your favorite HummusapiMAN Jeff taking over for Alexis as she’s touring Japan for her latest adventure. I’m happy to share with you a typical day’s worth of meals and hope you continue to feel inspired by all that Alexis shares with the world. Without further ado, enjoy!

I’ve been working out before work so I follow up with a shaker full of protein. This will usually tide me over for a few while as I get ready for work.

I’m a creature of habit when it comes to eating during the course of the week, which means I generally eat the same thing every morning. Why waste value mental bandwidth on figuring out what to eat when you can eliminate that stress by simply thinking ahead?!

By the time I’ve gotten ready for work, it’s about time to tame the hunger beast. As Alexis has mentioned in the past, we make a large batch of overnight steel cut oats every Sunday that I top with a sprinkle of cinnamon and a handful of berries. I’ll fry up a few eggs with micro greens and scarf that down with a large cup of coffee.

Lunch was the Korean Chicken Bowls recipe from The Fresh & Healthy Instant Pot CookbookDiscovering the value of the Instant Pot has been a game changer for me. As I mentioned, I’m all about efficiency and routine, so I’ve made the same or slight variation of this recipe for three to four weeks and haven’t gotten sick of it. Don’t judge!

I steam the sweet potatoes in the Instant Pot (we use this steamer basket) and mash them with a bit of garlic powder, salt and pepper. The perfect compliment to the chicken bowl!

I snack frequently throughout the course of the day, which generally consists of some type of bar/nuts and some type of fruit/veggie. This week was one of my favorite KIND bars plus another bar and some grapes.

Every Sunday, we discuss what we should eat for dinner the coming week then head to the grocery store to buy the ingredients and whatever else we need. I try to chip in with the prep and cooking as much as possible and contribute ideas about what to make. There are times when spending hours on a Sunday to prepare food for the week is the last thing we want to do, but it certainly pays off as the week unfolds.

Usually one of us (me) protests about spending those hours to prepare food, but the other (Alexis) reminds us that it will be well worth it once we are done. At that point, we turn up the music and make the most of it as our thoughts shift from dread to cherishing the time together. This makes it feel like less of a chore and more of a couples activity that we thoroughly enjoy. This week we made bean burgers and they were gooooood!! We topped them with some guac and paired them with some sweet potato fries (the frozen kind), blue corn tortilla chips, salad, and life was ok.

We love to wrap up the day with a treat and today was no exception. I ate a couple of these Chocolate Muffins then fell into the couch to watch our latest show Madame Secretary. There’s no better way to unwind after another great day!
